Preparation
- First, let the crêpes thaw. Cut out circles from the crêpes with a cutter and save the trimmings. (Tip: fry these until crispy and then coat them in cinnamon sugar to make crêpe frite.)
- Place a large scoop of cinnamon ice cream on a crêpe circle and press it down lightly. Place a second crêpe circle on top and form into a waffle.
- Coat the sides with meringue pieces.
- Put mascarpone cream on the bottom of the plate.
- Place the crêpe waffle on top. Finish with a dollop of mascarpone cream and cinnamon sugar.
