Sprayable gel of sour fruit
Making gel with acidic fruit requires extra attention; because the pH value is different. This causes the jelly to release easily and the moisture can seep out.Ingredients
220gsour fruit purée
3.2gAgar
4gcitras spherification
Olive oil
120gMonin sucre de canne (cane sugar syrup)
Preparation
- Mix the puree of your choice with cane sugar, citras, and agar (we used sea buckthorn, black cherry, and red fruit).
- Bring to a boil while stirring.
- Pour into containers and let cool until set as a jelly.
- Put the jelly in the food processor (with a blade), blend until smooth, and scrape down the sides well so there are no jelly pieces left.
- While blending, add a little olive oil until a creamy gel is formed.
