Outside Japan, Kobe is often the best-known name when it comes to Japanese beef. Kobe Beef has built up strong worldwide recognition and is often seen as the ultimate symbol of luxury Wagyu.
Within Japan, and among chefs and Wagyu specialists, however, Miyazaki and Kagoshima have an exceptionally strong reputation. For years, these regions have ranked among the absolute top at the prestigious “Wagyu Olympics”, the National Competitive Exhibition of Wagyu. This is Japan’s most important Wagyu competition, held every five years. Miyazaki has won the highest awards at this competition several times in a row and is internationally praised for its refined fat quality, elegant marbling and consistently top-level standards. Kagoshima is also among Japan’s absolute elite and won multiple top prizes at the 2022 Wagyu Olympics as the best-performing Wagyu region in the country. While Kobe is often known for its name and history, Miyazaki and Kagoshima are now regarded by many chefs as the benchmark in terms of quality, marbling and flavour experience. The Wagyu concept of Van der Zee consists of a selection from Miyazaki and Kagoshima.
