Food pairing: Very versatile, excellent with starters, from vegetable minestrone to spaghetti with mussels; exceptional with fish dishes or white meat.
Vinification: To highlight the fruitiness of the wine, the grapes are macerated with the skins for several hours before pressing. The grapes are then gently pressed and the lees are removed by natural sedimentation. Alcoholic fermentation takes place with selected yeasts at a controlled temperature of 19°C in large wooden barrels.

The Peter Zemmer winery, founded in 1928, is located in the small village of Cortina in Italy. The village is in the Alto Adige (South Tyrol) region and is surrounded by orchards and vineyards. Due to the great variety of soil types, many different grape varieties are cultivated here. The special microclimate in this valley ensures that the grapes grow under the best conditions.
Peter Zemmer winery fully meets its energy needs with sustainable energy. The energy is generated with 400 square meters of solar panels on the roofs of the winery. In addition to their natural winemaking methods, the winery is also committed to sustainability through this environmentally conscious energy concept.
