Living salt
This recipe is presented during the FoodXevent with Disfrutar on May 17, 2022. After the FoodXevent, this recipe will be updated with photos.This salt is 'activated in water' and produces a thermal reaction through crystallization. This reaction can be used as a cooking method 'on the plate' for, for example, shellfish, fish, and vegetables.

500gSal viva
650gWater
Preparation
- Bring 650 grams of water to a boil.
- Add 500 grams of Living Salt and cook to 117°C.
- Mix with a whisk.
- At 117°C, test a little liquid on a stainless steel plate to see if it starts to work.
If the liquid becomes hard and warm (= thermal reaction), the mixture is ready. - Divide into wide glass carafes for rapid cooling and cover.
- Let the mixture cool in the refrigerator to at least 20°C and at most 5°C.
- Do not move the carafe, otherwise the liquid will harden in the carafe.
- At the right temperature, pour over, for example, a langoustine tail.
- Let cook through to the desired doneness.
- Crack open the salt crust and remove the cooked ingredient.
Note: protect your hands and eyes due to the thermal reaction.
